Open-faced Tomato Sandwich

I honestly never planned to add this recipe to the website because I always thought it was just too simple, until I was talking with a neighbor about tomato recipes, and she had never heard of making a sandwich this way! This one I owe to my husband, as he and his Polish family made these sandwiches regularly.

It is our favorite way to use fresh slicing tomatoes in the summer, and one of the biggest reasons that I started making my Easy, Weekend Schedule, Sourdough. If you want to go a little crazy with this recipe, try it with my Quick Pickled Red Onions, or replace the butter with mashed avocado!

Tomato and Onion Sourdough Sandwich

A super simple sandwich, ideal for using garden fresh tomatoes and freshly-baked bread.
Servings 1 sandwich

Ingredients
  

  • 1 slice sourdough bread or other crusty bread
  • 1 tomato sliced
  • ¼ yellow or red onion finely sliced
  • unsalted butter to spread
  • salt and pepper to taste

Instructions
 

  • Spread butter over your sourdough bread. Arrange tomato slices and onion slices as desired. Top with salt and pepper.

Notes

This is a really simple recipe, so the flavor will be make or break depending on the quality of the ingredients. High-quality bread and tomatoes especially are the key to enjoying this simple lunch.
