Quick Pickled Red Onions

An easy topping that you'll whip together and keep ready to go in your fridge.

Equipment

  • 1 pint jar
  • 1 small saucepan

Ingredients
  

  • cup red onion thinly sliced
  • 1 clove garlic
  • 3 Tbsp granulated sugar
  • Tbsp salt
  • ½ tsp peppercorns
  • 1 cup white vinegar

Instructions
 

  • Add sugar, salt, peppercorns, and vinegar to a small saucepan. Bring to a boil and stir to dissolve salt and sugar, remove from heat.
  • Pack onion and garlic into a glass pint jar, and fill with vinegar, tapping the jar gently to remove air bubbles. Try to keep the red onions submerged in the brine. Allow to cool and then place in the refrigerator.
  • Flavor will change based on soaking time, Technically can be ready within an hour, but preferably allowed to soak overnight or for 24 hours.
  • Onions can be stored in the refrigerator for 3-4 weeks.
