Chipotle Lime Chicken Fajitas
Equipment
- 1 sheet pan
- aluminum foil optional
Ingredients
Chicken Seasoning
- 1 Chipotle pepper (in adobo) minced
- 1 Tbsp Adobo Sauce
- 2 Tbsp brown sugar
- 2 Tbsp unsweetened cocoa powder
- 1 lime zest and juice
- 1 pinch salt
Ingredients
- 2 lb chicken thighs sliced into thin strips
- 2 bell peppers sliced
- 1 small yellow onion sliced
- avocado oil
- tortillas and desired toppings to serve
Instructions
- Preheat oven to 425℉. Line baking sheet with aluminum foil.
- Mix all ingredients for chicken seasoning and add to a large plastic bag or mixing bowl. Add sliced chicken and mix to coat.
- On sheetpan, add onions and peppers, coat lightly with oil, and mix to coat. Prepare and empty area on the sheetpan and spread out your seasoned chicken.
- Bake 20 minutes, or until chicken is at 165℉ internal temperature.
- Serve on tortillas with desired toppings such as cilantro, sour cream, avocados, salsa, etc.
