Sheet Pan Steak Fajitas

An easy recipe to toss in the oven during even the most hectic of days. This has become one of my favorite weeknight dinners since trying to juggle cooking and a newborn. Lots of flavor without a lot of work, who could complain?

Sheet Pan Steak Fajitas

One pan wonder for an easy weeknight dinner.

Equipment

  • sheet pan

Ingredients
  

  • 1-2 lb flank steak (preferred) or skirt steak sliced into 1/2 inch strips
  • 1 medium yellow onion thinly sliced
  • 2 bell peppers thinly sliced
  • 3 Tbsp taco seasoning store bought or homemade
  • 3 Tbsp avocado oil
  • 1 lime cut into wedges

Serving

  • tortillas
  • cilantro
  • desired toppings such as avocado, salsa, and sour cream

Instructions
 

  • Preheat oven to 400°F
  • Line a baking sheet with aluminum foil. Place steak in the middle of the pan, with onions and peppers on either side. Drizzle with avocado oil and taco seasoning (I typically place more of the taco seasoning on the meat), and use your hands to toss until evenly coated. Place lime wedges on the pan.
  • Cook 12-14 minutes until the steak is browned and cooked to desired doneness. If cooking 1.5-2 lbs of meat you may need to stir the beef partway through, or add additional time (possibly up to 20 minutes total cook time).
  • Serve immediately, topping with squeezed baked lime wedges.
