Black Bean and Avocado Salad

Literally one of the easiest recipes I’ve ever made, perfect for throwing together with sheet pan fajitas or other weeknight meals.

Black Bean and Avocado Salad

Equipment

  • Microwave

Ingredients
  

  • 1 15 oz can Black Beans preferably with jalapenos and lime
  • 1 Tbsp lime juice
  • 1 Tbsp onion thinly sliced
  • 1 avocado diced

Instructions
 

  • In a heatproof bowl, heat up the black beans for 2-3 minutes.
  • While hot, mix in lime juice and onion.
  • Once cooled slightly, mix in avocado and serve immediately.

Notes

  • For variations, stir in a cup of white rice, or serve with tortilla chips.
  • Excellent as a side or as a topping for tacos, fajitas, or burritos.
