Cilantro-Lime Coleslaw

I’m not going to lie, coleslaw was never something I got excited about. Usually they were the leftover at the picnic or the barbecue, overly sweet, and often soggy.

Recently there was a recipe that we wanted a light, fresh, cool side to accompany, and were determined to come up with a tasty coleslaw to compliment it, and I think we nailed it! This recipe is paired down so that it works as a side for 2-3 people, and can easily be doubled or quadrupled for a party!

Cilantro-Lime Coleslaw

An easy, delicious, and slightly tangy coleslaw. Perfect for accompanying BBQ, most Asian dishes, or any other summer entree.

Ingredients
  

Produce

  • 2 cups green cabbage shredded – approximately 1/2 a head
  • 2 Tbsp red onion finely diced
  • Tbsp fresh cilantro finely chopped

Dressing

  • cup mayonnaise
  • ½ lime zest
  • 1 tsp fresh lime juice
  • ¼ tsp rice vinegar
  • ¼ tsp garlic powder
  • 1 tsp sweet chili sauce
  • 1 tsp granulated sugar

Instructions
 

  • Prepare produce and place into a medium mixing bowl.
  • In a small bowl, mix ingredients for Dressing. Pour over produce and mix thoroughly.
  • Refrigerate until serving.
