Country White Loaf – For the Bread Machine
Pictures do not do this loaf justice. Never have I ever made such a fluffy and spongy white bread in my bread machine. The interior crumb is spongy and delicious, the crust is an amazing mix of chewy and flaky. I couldn’t be happier.

A note – this recipe is made for a 1.5 lb loaf, however it fluffed up so much, it filled my 2 lb bread machine. Be prepared! You may need to scale down!

Country White Loaf – for the bread machine

Ingredients
1 lb loaf (500g)
- 1 cup water
- ¾ Tbsp olive oil
- ¾ Tbsp sugar
- 2¼ cups bread flour
- 1⅛ Tbsp corn starch
- 2¼ Tbsp powdered dry milk
- ¾ Tbsp vital wheat gluten flour
- 1⅛ tsp salt
- 1½ tsp active dry yeast
1.5 lb loaf (750g) – RECOMMENDED
- 1⅓ cup water
- 1 Tbsp olive oil
- 1 Tbsp sugar
- 3 cups bread flour
- 1½ Tbsp corn starch
- 3 Tbsp powdered dry milk
- 1 Tbsp vital wheat gluten flour
- 1½ tsp salt
- 2 tsp active dry yeast
2 lb loaf (1000g)
- 1⅔ cup water
- 1¼ Tbsp olive oil
- 1¼ Tbsp sugar
- 3¾ cups bread flour
- 1¾ Tbsp corn starch heaping
- 3¾ Tbsp powdered dry milk
- 1¼ Tbsp vital wheat gluten flour
- 1¾ tsp salt heaping
- 2½ tsp active dry yeast
Instructions
- Add all ingredients to the pan of your bread machine, in the order recommended by your manufacturer.
- Bake on the basic, light bread, standard loaf setting for your machine.
- Allow to cool before slicing.
Notes
- Prepare the dough as typical, setting your bread machine to ‘Dough’
- Remove the dough and separate into 4 (for large hoagies) or 8 (for individual servings) portions.
- Roll the dough into rolls or buns. Transfer to baking sheet and cover. Allow to rise for 30 minutes.
- Preheat oven to 375 degrees.
- Bake for 30 minutes.
- Transfer to wire rack and allow to cool before serving.
