Chicken Stuffing with Mushrooms and Bacon

What sounds more like Thanksgiving than a savory, moist stuffing with bacon and mushrooms? Growing up this stuffing is what made Thanksgiving, and no matter how many recipes from my husbands side of the family might get added to the table, none will ever replace this stuffing.

Chicken Stuffing with Mushrooms and Bacon

Easy, tasty, and ready to accompany any dinner. A favorite for Thanksgiving.

Ingredients
  

  • 1 box Stove Top Chicken Stuffing Mix
  • ¼ cup yellow onion
  • ½ cup sliced fresh mushrooms
  • 2 Tbsp butter
  • 1 Tbsp brown sugar
  • 3 slices bacon cooked and chopped into ½" or smaller pieces
  • 2 slices toast well done but not burnt, diced
  • 1 ½ cup chicken broth

Instructions
 

  • In a medium to large sauce pan, melt butter, and cook mushrooms and onion until soft and lightly browned.
  • Add chicken broth and brown sugar, and heat to boiling. Reduce heat.
  • Add stuffing mix, toast, and bacon. Lightly mix with a wooden spoon or fork. Do not over mix at this step or you might end up with mush.
  • Place the stuffing in a baking dish next to chicken, turkey, or on its own.
  • Bake at 400 for 25 minutes.

Notes

  • I am not one for stuffing my stuffing, so this recipe is designed to be baked either alongside your poultry, or on it’s own. The cooking time is optimized for chicken breasts, so for other cuts, verify that your meat is cooked through.
