Garlic Lover’s Roasted Spinach and Artichoke Dip

I love spinach and artichoke, on pretty much everything. This dip is delicious and easy for whenever you’re craving it for yourself, or need something for a party.

One thing I especially love about this recipe is that I can use fresh spinach from the garden, or frozen spinach that is thawed and ready to go.

  • cup mozzarella cheese shredded
  • ½ cup parmesan cheese
  • 10 oz spinach fresh, or thawed and drained.
  • 1 14 oz can artichoke hearts drained and chopped
  • 2 Tbsp garlic minced
  • 8 oz cream cheese
  • cup sour cream
  • ½ tsp salt

Instructions

  • Preheat oven to 400°F
  • Mix all ingredients and add to a 9"x13" baking pan
  • Bake for 25 minutes.

Notes

  • If using fresh spinach, you can either wilt the spinach on the stove prior to mixing with the rest of the ingredients, or you can remove the baking pan from the oven once or twice during the first 10 minutes of the bake time to cook down the spinach evenly.
