Avocado Egg Salad

An easy lunch for one, this is one of those recipes that I regularly go to whether it’s for a healthy lunch, a hearty lunch, lunch at home, or lunch in the office.

I prefer to serve this over toasted sourdough (as pictured), but it is also amazing in a lettuce or cheese wrap for a keto alternative.

Avocado Egg Salad

An easy and tasty lunch that is also healthy!

Ingredients
  

  • 2 eggs hard boiled
  • ½ avocado pealed and chopped
  • dash lemon juice
  • salt and pepper to taste
  • 1 Tbsp mayo
  • 2 Tbsp green onion finely diced

Instructions
 

  • Hard boil your eggs (takes approximately 14 minutes but can be done in advance). Peel and slice into quarters (or eighths).
  • Gently mash together your eggs and avocado (I prefer them to still be slightly chunky).
  • Mix in mayo, lemon juice, salt and pepper, and green onion.
  • Serve over toast, lettuce wrap, or preferred serving vessle.
