Racuszki – Polish yeast pancakes

This is a recipe from my husband’s childhood, in fact the exact recipe that his dad from Poland used to make. It takes a bit of time, allowing the batter to rise before frying, but it is well worth it for that yeasty pancake flavor. Traditionally served dusted with powdered sugar.

Racuszki – Polish yeast pancakes

A traditional Polish pancake, with a spongy texture and yeasty flavor, traditionally served with powdered sugar.
Prep Time 1 hour
Cook Time 15 minutes

Servings 6 pancakes

Equipment

  • Frying Pan

Ingredients
  

  • cup all-purpose flour
  • 1 cup milk warmed
  • 2 eggs room temperature
  • 1 tsp active dry yeast
  • ¼ cup granulated sugar
  • powdered sugar to serve

Instructions
 

  • Combine all ingredients until thoroughly mixed. Cover and leave in a warm place for the batter to rise for 1 hour.
  • When the batter has doubled in size, fry in a frying pan as you typically would for pancakes. We recommend frying in peanut oil.
  • Serve immediately, with powdered sugar.
