Racuszki - Polish yeast pancakes
A traditional Polish pancake, with a spongy texture and yeasty flavor, traditionally served with powdered sugar.

- 1¼ cup all-purpose flour
- 1 cup milk warmed
- 2 eggs room temperature
- 1 tsp active dry yeast
- ¼ cup granulated sugar
- powdered sugar to serve
Combine all ingredients until thoroughly mixed. Cover and leave in a warm place for the batter to rise for 1 hour.
When the batter has doubled in size, fry in a frying pan as you typically would for pancakes. We recommend frying in peanut oil.
Serve immediately, with powdered sugar.
