Fried Zucchini

Every gardener knows, that the secret to surviving, is knowing how to cook up all the extra zucchini that you undoubtedly will have in the spring, even though you only planted a single zucchini plant. Our favorite way? Fry it up!

Fried Zucchini

An easy recipe for a delicious side, using our garden's favorite spring surplus.
Prep Time 5 minutes
Cook Time 10 minutes
Course Appetizer, Side Dish
Servings 2

Equipment

  • Dutch oven/deep fryer/frying pan.

Ingredients
  

  • 1 zucchini medium, sliced into ¼ inch disks.
  • 2 eggs
  • ½ cup breadcrumbs
  • salt to taste
  • oil (preferably peanut) for frying

Instructions
 

  • Heat deep frying oil (or pan frying if preferred), to 350℉.
  • Slice zucchini and set aside. Beat the eggs in a small bowl and set aside. Pour breadcrumbs into a shallow dish (I like to use a pie pan).
  • Working in batches, dip each of the zucchini slices into the eggs, then evenly coat on each side with breadcrumbs. Place in fryer until golden brown and crisp, usually 3-5 minutes.
  • Transfer to a plate and salt to taste.
  • Serve with ranch, marinara, or other preferred dipping sauce if desired.
