Fried Zucchini
An easy recipe for a delicious side, using our garden's favorite spring surplus.

- 1 zucchini medium, sliced into ¼ inch disks.
- 2 eggs
- ½ cup breadcrumbs
- salt to taste
- oil (preferably peanut) for frying
Heat deep frying oil (or pan frying if preferred), to 350℉.
Slice zucchini and set aside. Beat the eggs in a small bowl and set aside. Pour breadcrumbs into a shallow dish (I like to use a pie pan).
Working in batches, dip each of the zucchini slices into the eggs, then evenly coat on each side with breadcrumbs. Place in fryer until golden brown and crisp, usually 3-5 minutes.
Transfer to a plate and salt to taste.
Serve with ranch, marinara, or other preferred dipping sauce if desired.
