Granny Smith Apple Turnovers

One of my husband’s favorite breakfasts has always been apple turnovers. It has been my goal to replace the freezer section turnovers for quite some time and with this recipe I’ve finally accomplished it.

Typically I’ll prepare a full batch of these turnovers, then bake half of them immediately, freezing the other half. Once frozen they can go directly into the oven and bake up perfectly – only adding a few extra minutes to the cooking time.

Granny Smith Apple Turnovers

Easy to make, freezable, puff-pastry based turnovers.

Ingredients
  

Turnovers

  • 2 Tbsp butter
  • 3/4 cup brown sugar
  • 1 tsp cinnamon
  • 1 Tbsp corn starch
  • 1 17 oz package of frozen puff pastry sheets thawed
  • 4 granny smith apples peeled and cored

Egg wash (optional)

  • 1 egg
  • 1 Tbsp water
  • sugar optional, for sprinkling

Glaze (optional)

  • 1 cup powdered sugar sifted
  • 1 Tbsp water
  • 1 tsp vanilla
  • 1 pinch salt

Instructions
 

  • In a skillet or saucepan melt butter over medium heat. Add peeled and cored apples and cook and stir for 3-5 minutes (should be softening).
  • In a small mixing bowl combine brown sugar, corn starch, and cinnamon. Add to the apples and mix, cooking for another 3-5 minutes until sauce has thickened.
  • Preheat the oven to 400°F
  • Unfold puff pastry sheets and cut each larger square into four smaller squares. Spoon apples into the center of each square. Fold pastry corner to corner in a triangle. Press the edges together and crimp with a fork.
  • Option 1 – Score the puff pastry sheet (optional, not required) brush with egg wash (whisked water and egg), and sprinkle with sugar (also optional).
  • If freezing, place in the freezer. Otherwise place on silicon baking sheet or parchment paper lined baking sheet.
  • Bake for 25 minutes in preheated oven until turnovers are puffed and golden brown.
  • Option 2 – if glazing, allow pastries to cool fully. Whisk together glaze ingredients and drizzle over pastries.
