Granny Smith Apple Turnovers

Easy to make, freezable, puff-pastry based turnovers.

Ingredients
  

Turnovers

  • 2 Tbsp butter
  • 3/4 cup brown sugar
  • 1 tsp cinnamon
  • 1 Tbsp corn starch
  • 1 17 oz package of frozen puff pastry sheets thawed
  • 4 granny smith apples peeled and cored

Egg wash (optional)

  • 1 egg
  • 1 Tbsp water
  • sugar optional, for sprinkling

Glaze (optional)

  • 1 cup powdered sugar sifted
  • 1 Tbsp water
  • 1 tsp vanilla
  • 1 pinch salt

Instructions
 

  • In a skillet or saucepan melt butter over medium heat. Add peeled and cored apples and cook and stir for 3-5 minutes (should be softening).
  • In a small mixing bowl combine brown sugar, corn starch, and cinnamon. Add to the apples and mix, cooking for another 3-5 minutes until sauce has thickened.
  • Preheat the oven to 400°F
  • Unfold puff pastry sheets and cut each larger square into four smaller squares. Spoon apples into the center of each square. Fold pastry corner to corner in a triangle. Press the edges together and crimp with a fork.
  • Option 1 - Score the puff pastry sheet (optional, not required) brush with egg wash (whisked water and egg), and sprinkle with sugar (also optional).
  • If freezing, place in the freezer. Otherwise place on silicon baking sheet or parchment paper lined baking sheet.
  • Bake for 25 minutes in preheated oven until turnovers are puffed and golden brown.
  • Option 2 - if glazing, allow pastries to cool fully. Whisk together glaze ingredients and drizzle over pastries.
