One Pot Cheesy Goulash

We all have those go-to, easy, cold-weather, make-you-feel-better recipes. For me, one of those is Cheesy Goulash. I make the distinction of Cheesy Goulash because this is the American-ized, pasta, cheese, and tomato style of goulash, as opposed to the more classical European stew style of goulash (I promise I’ll post my recipe for that in the future).

One Pot Cheesy Goulash

Perfect for a cold or rainy day, or to enjoy over next to a warm camp-fire. Freeze-dry friendly recipe.

Ingredients
  

  • 1 lb ground beef
  • 2 tsp garlic minced
  • 1 ½ cups water
  • 1 14.5 oz can tomato sauce
  • 1 14.5 oz can diced tomatoes
  • 1 Tbsp Italian seasoning
  • 2 bay leaves (optional)
  • 1 Tbsp soy sauce
  • ½ Tbsp seasoned salt (e.g. Lawry's, Nature's Finest)
  • 1 cup elbow macaroni noodles uncooked
  • ½ cup sharp cheddar cheese shredded

Instructions
 

  • Saute ground beef in skillet over medium-high heat until browned. Drain.
  • Add minced garlic and saute 5 minutes.
  • Add water, tomato sauce, diced tomatoes, Italian seasoning, bay leaves, soy sauce, and seasoned salt. Stir well. Cover and cook 15-20 minutes.
  • Add uncooked elbow macaroni to the skillet, stir well, cover and simmer for 30 minutes.
  • Turn off heat, remove bay leaves, and stir in cheddar immediately before serving.

Notes

  • My husband and I love to camp, and have purchased a Harvest Right freeze-dryer in order to make our own ready-to-go camping meals. This recipe freeze-dries very nicely (not all do) and re-hydrates like a charm!
