Equipment
- ice cream maker
- saucepan
Ingredients
- 3 cups water filtered
- 3 cups granulated sugar
- 1½ cup lemon juice
- ¾ cup lime juice
- 1 Tbsp lemon zest optional
Instructions
- Prepare your ice cream maker, whether that is an initial chilling cycle, or placing the freezing bowl in the freezer for at least 24 hours.
- In a large saucepan mix the sugar and water, bringing it to a low boil over medium to high heat. Lower the heat and simmer until the sugar is fully dissolved, approximately 5 minutes.
- Allow the sugar mixture to cool completely, and place in the refrigerator until thoroughly chilled (overnight if in doubt).
- Add the lemon juice and zest to the cooled sugar mixture, stir to combine.
- Prepare your ice cream maker for churning and begin mixing on low speed. Add your sorbet mixture and churn for approximately 25-30 minutes.
- The mixture will have frozen to a thick, soft, icy consistency. Serve immediately, or place in the freezer to harden more thoroughly.
