Equipment

  • ice cream maker
  • saucepan

Ingredients

  • 3 cups water filtered
  • 3 cups granulated sugar
  • cup lemon juice
  • ¾ cup lime juice
  • 1 Tbsp lemon zest optional

Instructions

  • Prepare your ice cream maker, whether that is an initial chilling cycle, or placing the freezing bowl in the freezer for at least 24 hours.
  • In a large saucepan mix the sugar and water, bringing it to a low boil over medium to high heat. Lower the heat and simmer until the sugar is fully dissolved, approximately 5 minutes.
  • Allow the sugar mixture to cool completely, and place in the refrigerator until thoroughly chilled (overnight if in doubt).
  • Add the lemon juice and zest to the cooled sugar mixture, stir to combine.
  • Prepare your ice cream maker for churning and begin mixing on low speed. Add your sorbet mixture and churn for approximately 25-30 minutes.
  • The mixture will have frozen to a thick, soft, icy consistency. Serve immediately, or place in the freezer to harden more thoroughly.
