- 3 cups water filtered
- 3 cups granulated sugar
- 1½ cup lemon juice
- ¾ cup lime juice
- 1 Tbsp lemon zest optional
Prepare your ice cream maker, whether that is an initial chilling cycle, or placing the freezing bowl in the freezer for at least 24 hours.
In a large saucepan mix the sugar and water, bringing it to a low boil over medium to high heat. Lower the heat and simmer until the sugar is fully dissolved, approximately 5 minutes.
Allow the sugar mixture to cool completely, and place in the refrigerator until thoroughly chilled (overnight if in doubt).
Add the lemon juice and zest to the cooled sugar mixture, stir to combine.
Prepare your ice cream maker for churning and begin mixing on low speed. Add your sorbet mixture and churn for approximately 25-30 minutes.
The mixture will have frozen to a thick, soft, icy consistency. Serve immediately, or place in the freezer to harden more thoroughly.
