This is my favorite lunch when I’m working from home. It takes 15-20 minutes to make, is super flavorful, and is relatively healthy! (Especially if you compare it to ramen or microwave taquitos)
This recipe gives you a crispy pan-fried salmon patty, with spicy mayo, and I typically serve it with half an avocado drizzled with sweet soy glaze. If I’m following a keto diet at the time, I replace the bread crumbs with crumbled pork rinds, and the sweet soy glaze with a small dash of soy sauce.

Salmon Patties with Spicy Mayo
A super quick, tasty, and relatively healthy lunch! About 15 minutes to make, and perfectly hitting that bento box craving.
Heat avocado oil in a cast iron skillet over medium heat.
Mix ingredients for salmon patties. You want to be able to form this into a relatively secure patty. If there is too much moisture, add additional breadcrumbs. If too many breadcrumbs have been added, you can amend with mayo to assist with binding.
Form the salmon patty mixture into small hamburger like patties (3-4 depending on size of patties). Place in heated oil and fry until a golden brown crust forms (3-5 minutes). Flip and cook the other side, adding additional oil if necessary.

Mix spicy mayo ingredients. You can tweak the garlic chili sauce to taste.
