Avocado Egg Salad
An easy and tasty lunch that is also healthy!

- 2 eggs hard boiled
- ½ avocado pealed and chopped
- dash lemon juice
- salt and pepper to taste
- 1 Tbsp mayo
- 2 Tbsp green onion finely diced
Hard boil your eggs (takes approximately 14 minutes but can be done in advance). Peel and slice into quarters (or eighths).
Gently mash together your eggs and avocado (I prefer them to still be slightly chunky).
Mix in mayo, lemon juice, salt and pepper, and green onion.
Serve over toast, lettuce wrap, or preferred serving vessle.
