Cheesy Funeral Potatoes
This recipe is the recipe that we cannot go a single holiday without. Christmas, Thanksgiving, Easter, 4th of July, Arbor Day, National Casserole Day, we will make up days and reasons to make these super delicious potatoes.
This is one of those funny recipes that both my husband and I grew up with a version of. Some call these cheesy hashbrowns, some call them funeral potatoes (there’s a custom of comfort food), whatever you call them they are tasty.
This is also one of the few recipes that I actually hope for leftovers, though there rarely are any. They heat up really easily and go amazingly with breakfast after the busy holidays.

Cheesy Funeral Potatoes
Ingredients
- 4 oz unsalted butter softened
- 1 can cream of chicken soup
- 8 oz sour cream
- 8 oz shredded sharp cheddar cheese
- 1 package Ore-Ida O'Brien Potatoes frozen
- potato chips roughly crumbled
Instructions
- Preheat oven to 350°F.
- Combine butter, soup, sour cream, cheddar, and potatoes and add to a greased 9 x 13 baking pan. Top with crumbled potato chips.
- Bake uncovered for 1 hour and 15 minutes.
