Potato and Herb Bread for the Bread Machine
When I was young, in middle school, my homeroom teacher would make a special bread for everyone on their birthday. It would be whatever type of bread the student requested. I’m not sure how everyone knew, but her potato bread was by far the favorite. Out of 25 students I’m pretty sure we had 20 potato breads over the course of the year.
After many years of attempting potato bread after potato bread, herb mixes, and other various recipes, I have finally figured out her delicious potato bread!

Potato and Herb Bread for the Bread Machine

Ingredients
1 lb (500g) loaf
- 1 cup water – 1 Tbsp
- 1½ Tbsp butter
- 1½ Tbsp granulated sugar
- 2½ cups bread flour
- ¼ + 2 Tbsp cups instant potato flakes
- 1½ Tbsp powdered milk
- ¾ tsp dried basil
- ¾ tsp dried dill
- 1 pinch garlic powder
- 1⅛ tsp active dry yeast
1.5 lb (750g) loaf – RECOMMENDED
- 1¼ cups water
- 2 Tbsp butter
- 2 Tbsp granulated sugar
- 3 cups bread flour
- ½ cup instant potato flakes
- 2 Tbsp powdered milk
- 1 tsp dried basil
- 1 tsp dried dill
- ¼ tsp garlic powder
- 1½ tsp active dry yeast
2 lb (1000g) loaf
- 1½ cups water + 1 Tbsp
- 2½ Tbsp butter
- 2½ Tbsp granulated sugar
- 3¾ cups bread flour
- ⅔ cups instant potato flakes
- 1¼ tsp dried basil
- 1¼ tsp dried dill
- ⅓ tsp garlic powder
- 1¾ tsp active dry yeast heaping
Instructions
- Add ingredients to the pan of your bread machine in the order listed above (or recommended by your manufacturer) and run on the Standard Loaf setting.
- Allow to cool before slicing.
