Grilled Chicken Thighs – Marinade

Thank you to my husband for this amazing recipe. We had found ourselves in a loop of googling a chicken marinade recipe every time we wanted to grill, with many varying results. We finally decided that we needed to develop our own. Take our favorite elements, tweak until perfection, and here is our favorite, simple, chicken marinade. We specifically went for ingredients that we were most likely to have on hand, that still packed the best flavor.

Equipment

  • grill

Ingredients

  • 1 lb chicken thighs

Marinade Ingredients

  • ½ cup avocado oil
  • 4 Tbsp soy sauce
  • 2 Tbsp brown sugar
  • 3 Tbsp orange juice
  • 2 tsp salt
  • ½ tsp pepper
  • 2 tsp minced garlic

Instructions

  • Mix all marinade ingredients and add to a plastic bag or marinating dish. Add the chicken and mix to cover thoroughly.
  • Allow chicken to sit in the marinade in the fridge for 4-12 hours.
  • Grill the chicken on high, 5-7 minutes per side, or until cooked through.

Notes

  • This recipe originally called for olive oil; however, we found that during the marinade process, the olive oil would turn solid and not permeate the chicken very well. We’ve since tested switching this to avocado oil and have been much happier with the results.
