Cilantro-Lime Coleslaw

An easy, delicious, and slightly tangy coleslaw. Perfect for accompanying BBQ, most Asian dishes, or any other summer entree.

Ingredients
  

Produce

  • 2 cups green cabbage shredded - approximately 1/2 a head
  • 2 Tbsp red onion finely diced
  • Tbsp fresh cilantro finely chopped

Dressing

  • cup mayonnaise
  • ½ lime zest
  • 1 tsp fresh lime juice
  • ¼ tsp rice vinegar
  • ¼ tsp garlic powder
  • 1 tsp sweet chili sauce
  • 1 tsp granulated sugar

Instructions
 

  • Prepare produce and place into a medium mixing bowl.
  • In a small bowl, mix ingredients for Dressing. Pour over produce and mix thoroughly.
  • Refrigerate until serving.

Notes

  • For more color, or for ease, feel free to use store-bought cabbage mix with red cabbage and carrots as shown in the image above.
