Chipotle Lime Chicken Fajitas

An easy sheet pan recipe to spice up your weeknight dinner rotation.

Equipment

  • aluminum foil optional

Ingredients
  

Chicken Seasoning

  • 1 Chipotle pepper (in adobo) minced
  • 1 Tbsp Adobo Sauce
  • 2 Tbsp brown sugar
  • 2 Tbsp unsweetened cocoa powder
  • 1 lime zest and juice
  • 1 pinch salt

Ingredients

  • 2 lb chicken thighs sliced into thin strips
  • 2 bell peppers sliced
  • 1 small yellow onion sliced
  • avocado oil
  • tortillas and desired toppings to serve

Instructions
 

  • Preheat oven to 425℉. Line baking sheet with aluminum foil.
  • Mix all ingredients for chicken seasoning and add to a large plastic bag or mixing bowl. Add sliced chicken and mix to coat.
  • On sheetpan, add onions and peppers, coat lightly with oil, and mix to coat. Prepare and empty area on the sheetpan and spread out your seasoned chicken.
  • Bake 20 minutes, or until chicken is at 165℉ internal temperature.
  • Serve on tortillas with desired toppings such as cilantro, sour cream, avocados, salsa, etc.
