Chipotle Lime Chicken Fajitas

Chicken Seasoning
- 1 Chipotle pepper (in adobo) minced
- 1 Tbsp Adobo Sauce
- 2 Tbsp brown sugar
- 2 Tbsp unsweetened cocoa powder
- 1 lime zest and juice
- 1 pinch salt
Ingredients
- 2 lb chicken thighs sliced into thin strips
- 2 bell peppers sliced
- 1 small yellow onion sliced
- avocado oil
- tortillas and desired toppings to serve
Preheat oven to 425℉. Line baking sheet with aluminum foil.
Mix all ingredients for chicken seasoning and add to a large plastic bag or mixing bowl. Add sliced chicken and mix to coat.
On sheetpan, add onions and peppers, coat lightly with oil, and mix to coat. Prepare and empty area on the sheetpan and spread out your seasoned chicken.
Bake 20 minutes, or until chicken is at 165℉ internal temperature.
Serve on tortillas with desired toppings such as cilantro, sour cream, avocados, salsa, etc.
