Banana Bread
In my opinion, banana bread is one of those wonderful entry-points into baking. It’s easy and delicious, and with the right recipe, just about error proof! This recipe contains a secret ingredient that helps to make it more consistent and less likely to be dried out. And just in case you don’t have any applesauce handy – I’ve included my backup recipe as well, that turns out just as tasty!
This recipe is also a great one for modifying! Do you like walnuts or chocolate chips in your banana bread? Add them! A quarter cup of either would be plenty to add an extra dimension of flavor and texture.

Banana Bread

Ingredients
- 3 bananas very ripe (should be about 1½ cups mashed)
- ⅓ cup butter melted
- ½ tsp baking soda
- ⅛ tsp salt
- ½ cup sugar (see note)
- 4 oz applesauce
- 1 egg beaten
- ¼ tsp cinnamon (optional, see note)
- 1 pinch nutmeg
- 1 tsp vanilla extract
- 1½ cup all purpose flour
Instructions
- Preheat the oven to 350°F and grease (or butter) a standard 4×8 loaf pan.
- In a mixing bowl, mash the bananas with a fork until smooth. Stir in the melted butter.
- Mix in baking soda, salt, sugar, egg, applesauce, cinnamon if using, nutmeg and vanilla thoroughly.
- Once the above ingredients are thoroughly mixed in, mix in all-purpose flour. Only mix until just combined and moistened.
- Pour batter into loaf pan and bake for ~1 hour. Test with a toothpick inserted into the center and be sure that it comes out clean.
- Allow to cool before serving or storing.
Notes
- Note on the applesauce: 4 oz is perfectly a Mott’s single serving applesauce cup. If you are using unsweetened applesauce you may wish to add a small amount more sugar. If you are using cinnamon flavored applesauce you do not need to add additional cinnamon to the recipe.
