Equipment

  • loaf pan

Ingredients

  • 3 bananas very ripe (should be about 1½ cups mashed)
  • cup butter melted
  • ½ tsp baking soda
  • tsp salt
  • ½ cup sugar (see note)
  • 4 oz applesauce
  • 1 egg beaten
  • ¼ tsp cinnamon (optional, see note)
  • 1 pinch nutmeg
  • 1 tsp vanilla extract
  • cup all purpose flour

Instructions

  • Preheat the oven to 350°F and grease (or butter) a standard 4x8 loaf pan.
  • In a mixing bowl, mash the bananas with a fork until smooth. Stir in the melted butter.
  • Mix in baking soda, salt, sugar, egg, applesauce, cinnamon if using, nutmeg and vanilla thoroughly.
  • Once the above ingredients are thoroughly mixed in, mix in all-purpose flour. Only mix until just combined and moistened.
  • Pour batter into loaf pan and bake for ~1 hour. Test with a toothpick inserted into the center and be sure that it comes out clean.
  • Allow to cool before serving or storing.

Notes

  • Note on the applesauce: 4 oz is perfectly a Mott's single serving applesauce cup. If you are using unsweetened applesauce you may wish to add a small amount more sugar. If you are using cinnamon flavored applesauce you do not need to add additional cinnamon to the recipe.
