Banana Bread
An easy beginner recipe, ready for modification.

- 3 bananas very ripe (should be about 1½ cups mashed)
- ⅓ cup butter melted
- ½ tsp baking soda
- ⅛ tsp salt
- ½ cup sugar (see note)
- 4 oz applesauce
- 1 egg beaten
- ¼ tsp cinnamon (optional, see note)
- 1 pinch nutmeg
- 1 tsp vanilla extract
- 1½ cup all purpose flour
Preheat the oven to 350°F and grease (or butter) a standard 4x8 loaf pan.
In a mixing bowl, mash the bananas with a fork until smooth. Stir in the melted butter.
Mix in baking soda, salt, sugar, egg, applesauce, cinnamon if using, nutmeg and vanilla thoroughly.
Once the above ingredients are thoroughly mixed in, mix in all-purpose flour. Only mix until just combined and moistened.
Pour batter into loaf pan and bake for ~1 hour. Test with a toothpick inserted into the center and be sure that it comes out clean.
Allow to cool before serving or storing.
- Note on the applesauce: 4 oz is perfectly a Mott's single serving applesauce cup. If you are using unsweetened applesauce you may wish to add a small amount more sugar. If you are using cinnamon flavored applesauce you do not need to add additional cinnamon to the recipe.

Follow all of the instructions above, with the following ingredients.

- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 cup all purpose flour
- 1/2 cup wheat flour
