Sourdough Toaster Waffles

Easy waffles that can be made ahead, and reheated in a toaster, for perfect waffles when you want them.

Ingredients
  

  • ½ cup leftover sourdough starter unfed
  • 1 cup milk
  • 2 Tbsp unsalted butter melted
  • 1 egg
  • 1 cup all-purpose flour
  • 1 Tbsp sugar
  • ½ tsp salt
  • 2 tsp baking powder

Instructions
 

  • Preheat your waffle iron. I use a Dash Mini Maker so that I can easily fit leftover waffles in my toaster, but this recipe should work with pretty much any waffle iron.
  • Whisk your leftover starter, milk, butter, and egg together until smooth. Add flour, sugar, baking powder, and salt, and whisk until smooth.
  • Lightly coat the waffle iron with cooking spray. Add batter to your waffle iron as appropriate for your particular model (I find that just slightly less that 1/4 up is perfect for the Dash Mini waffle maker).
  • Repeat until you are out of batter.
  • Service with butter, maple syrup, fruit, jam, whipped cream, cinnamon and sugar, whatever makes your waffles happy!

Notes

  • The downside of the Dash Mini Maker is that it really can take a while to make a large batch of waffles, I’ll usually make them in the background while I’m doing other things in the kitchen.
  • I will usually eat a few of the waffles right away, and then use my Foodsaver to seal up and save 2 to 3 so that I can freeze them and reheat them in the toaster whenever I’m in the mood for waffles.
