Cuisine American
- ½ cup leftover sourdough starter unfed
- 1 cup milk
- 2 Tbsp unsalted butter melted
- 1 egg
- 1 cup all-purpose flour
- 1 Tbsp sugar
- ½ tsp salt
- 2 tsp baking powder
Preheat your waffle iron. I use a Dash Mini Maker so that I can easily fit leftover waffles in my toaster, but this recipe should work with pretty much any waffle iron. Whisk your leftover starter, milk, butter, and egg together until smooth. Add flour, sugar, baking powder, and salt, and whisk until smooth.
Lightly coat the waffle iron with cooking spray. Add batter to your waffle iron as appropriate for your particular model (I find that just slightly less that 1/4 up is perfect for the Dash Mini waffle maker).
Repeat until you are out of batter.
Service with butter, maple syrup, fruit, jam, whipped cream, cinnamon and sugar, whatever makes your waffles happy!
- The downside of the Dash Mini Maker
is that it really can take a while to make a large batch of waffles, I’ll usually make them in the background while I’m doing other things in the kitchen.
- I will usually eat a few of the waffles right away, and then use my Foodsaver to seal up and save 2 to 3 so that I can freeze them and reheat them in the toaster whenever I’m in the mood for waffles.
