Polish Cucumber Radish Salad

Known as mizeria in Poland, this is a refreshing summer salad, perfect for when the cucumbers are ripe and you want something light and fast to enjoy with your summer grill out!

Ingredients
  

Produce

  • 2 cucumbers thinly sliced (peeled if preferred)
  • 3-4 radishes thinly sliced
  • Tbsp green onions finely chopped
  • 1 Tbsp fresh dill finely chopped
  • 1 Tbsp kosher salt for cucumber prep (optional)

Dressing

  • ½ cup sour cream
  • 1 Tbsp mayonnaise preferably homemade, Dukes, or Kewpie
  • 1 Tbsp fresh lemon juice
  • Salt and Pepper to taste

Instructions
 

  • Place cucumber slices in a large colander and sprinkle with salt. Set aside for 15-20 minutes to drain. (Optional, but preferred if you're not serving the salad immediately as the cucumbers will release water into the dressing)
  • In a small bowl, whisk together Dressing ingredients.
  • Toss produce together in a medium sized bowl, and stir in dressing. Depending on the size of your cucumbers and radishes you may wish to omit some of the dressing so that it doesn't become too heavy.
  • Serve chilled as soon as possible.
