Preheat oven to 400℉
Pound chicken breasts until they are an even thickness for best cooking.
In a shallow bowl (or pie pan) beat the egg. In a separate shallow bowl combine the bread crumbs, panko, parmesan, salt, and pepper. Dip the chicken in the egg and then the breadcrumb mixture, patting gently to adhere.
In a large, oven-safe skillet, heat the olive oil over medium high heat. Once heated, add the chicken. Cook about 3 minutes on the first side, then flip over, and place the pan in the oven. Bake for 10-12 minutes, or until the chicken is cooked through.
During this time, cook any pasta or other sides.
Remove the chicken from the oven and spoon tomato sauce over the top, sprinkle on mozzarella. Turn the oven to broil and broil until the cheese is melted and just lightly browned.
Serve immediately over pasta with fresh basil garnish if desired.
